Allergen contamination from facilities, equipment, materials, utensils, food handling, air, storage, and even cleaning practices can be problematic, especially given the regulatory zero tolerance limits. Control of contamination involves a varied combination of solutions which are generally unique to the product and process. Industry best practices including dust controls, equipment design modification, changes in operational sanitation and cleaning practices, storage, work-in-process controls, rework controls, strict protection during storage, color coding and letter coding systems, allergen awareness training, and a myriad of other additional measures exist. Control measures and current tools for monitoring their effectiveness will be discussed.
